Green beans with anchovies

Ingredients for 4 servings:

  • 600 g beans, green, fine (also frozen)
  • 1 bunch of parsley
  • 6 anchovy fillets, pickled
  • 2 garlic cloves
  • 4 tbsp olive oil
  • 1 tbsp butter
  • black pepper, freshly ground
  • possibly salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash and trim the green beans. Then blanch them in boiling water for about 5-8 minutes until al dente. Then rinse in cold water and drain. Rinse, dry, and chop the anchovy fillets. Peel the garlic cloves and pluck the parsley leaves – finely chop both. Heat butter and olive oil in a wide pot or pan. Add the anchovies, garlic, and parsley. Sauté briefly, then add the green beans and mix. Season with pepper if desired. I’ll decide whether salt is necessary in addition to the anchovies when I taste. Serve hot. This recipe goes very well with roast beef (brasato), steaks, or can also be served as an appetizer.
