Green beans with chili and feta

Ingredients for 3 servings:

  • 1 kg beans, broad, green
  • 100 g feta cheese
  • some butter (omit for cow’s milk-free)
  • lots of vegetable broth
  • 1 tbsp, heaped savory
  • some chili flakes
  • some salt and pepper, possibly granulated stock
  • some roux (alternatively starch)
  • 2 pinches of sugar, depending on the acidity of the feta

Instructions

Working time approx. 8 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 23 minutes

gluten-free and cow’s milk-free possible, vegetarian

Wash the beans and cut into pieces. Cook in a pot with plenty of vegetable stock until tender. Drain a little of the cooking water, leaving enough for a sauce. Thicken with a roux (or store-bought) or cornstarch until thickened. Crumble the feta, add the spices and butter, and mix well until the cheese is almost melted. Season to taste (with salt and granulated stock, if desired) and add a little sugar if it’s too acidic. It all depends on the feta you use; some are a bit acidic.
