Green beans with potatoes and pine nuts

Ingredients for 4 servings:

  • 6 tbsp olive oil
  • 1.2 kg potatoes, waxy, small, cooked and peeled
  • salt and pepper
  • 400 g onion(s), peeled, halved, cut into fine strips
  • 6 garlic cloves, finely diced
  • 500 g green beans, blanched for 8 minutes, cooled and halved
  • 40 g pine nuts
  • 1 tbsp pepper, green, pickled
  • 2 tbsp parsley, flat, chopped
  • 2 tbsp balsamic vinegar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Heat the olive oil in a large roasting pan, add the potatoes, and fry until golden brown. Season to taste with salt and pepper. Add the onions, garlic, green beans, pine nuts, and green peppercorns and fry for another 5 minutes, stirring occasionally. Add the parsley and balsamic vinegar, and let the vinegar reduce completely.
