Green beans with Roquefort and walnuts

Ingredients for 4 servings:

  • ½ kg beans (princess)
  • 4 slice(s) ham (prosciutto), bacon also works
  • 100 g cheese (Roquefort), diced
  • 150 g walnuts
  • lots of black pepper, freshly ground
  • n. B. Oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

The salt of the cheese, the sweetness of the nuts – great combination with green beans

Cook/steam the trimmed beans until al dente, then rinse under cold water. Roast the walnut pieces on a baking sheet at 175°C in the oven for about 3-7 minutes, being careful not to burn. Quarter or chop smaller. Cut the prosciutto or bacon into 1/2-cm pieces and roast/fry in a pan for 5-6 minutes. Toss the prosciutto with a little oil, but for a shorter time. Remove from the fat and place on kitchen paper. Leave the fat in the pan. Add the cooked green beans to the pan and heat for about 2 minutes. Add the diced Roquefort, stir until the cheese just begins to melt, which takes about 30 seconds. Add the walnut pieces, sprinkle generously with pepper, and serve immediately. Delicious as a light main course with some bread, but also great as a side dish, especially with lamb (my favorite). Best with fresh beans, nice and green and crunchy.
