Ingredients for 4 servings:

  • 500 g flour
  • 6 eggs
  • 1 tsp, leveled salt
  • 1 ½ liters of meat broth, already seasoned
  • 3 handfuls of spring onion(s), the green
  • 100 g bacon, smoked and not too fatty

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Swabian specialty

Mix the flour, eggs, and salt and beat the dough until it bubbles. The dough should be quite firm; add a little more flour if necessary. Let it rest for 1/2 hour, then stir in the very finely diced bacon and the finely chopped onion. Use a wet teaspoon to scoop out dumplings from the dough and drop them into the very hot, but not boiling, meat broth. Let them simmer for about 10-15 minutes. You can also simmer the green dumplings in salted water; brown the onions in butter, then pour them over the green dumplings and serve with a green salad.
