Tomato and feta cheese salad

Ingredients for 4 servings:

  • 5 tomatoes
  • 1 bunch of spring onions
  • 1 bowl of sheep’s cheese (Patros sheep’s cheese with herbs)
  • 1 bowl of sheep’s cheese (Patros sheep’s cheese in brine)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the tomatoes and spring onions, dice them, and place them in a bowl. Add all of the herb brine and about half of the brine. Roughly mash the two feta cheeses with a fork and stir them into the tomatoes and spring onions. Done! No need to season. Ciabatta or white bread goes particularly well with this salad. Another tip: Don’t arrange the salad until shortly before serving, as it absorbs a lot of water.
