Ingredients for 2 servings:

  • 1 bag of arugula
  • 1 small onion(s) or shallot
  • 100 g diced ham
  • 1 small eggplant(s)
  • 1 small zucchini
  • n. B. Vegetables of your choice, frozen, mixed
  • some French fries, frozen
  • 50 g pine nuts or pumpkin seeds
  • n. B. Dressing of your choice
  • n. B. herb curd

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the arugula and divide two or three handfuls between two plates as a base, then set aside. Finely chop the onion and fry in a pan along with the diced ham. Then add the eggplant and zucchini, cut into smaller pieces, to the pan along with the frozen vegetables, frozen fries, and pine nuts. Fry everything for a few minutes until cooked through or lightly browned. Place a dollop of herb curd cheese in the center of the arugula. Spread the contents of the pan evenly over the arugula on the plates while it’s still warm. Finally, drizzle with the salad dressing. A light, healthy dish – quick to make and extremely versatile in its ingredients! Tip: You can swap out the vegetables according to your taste. A vegetarian version can also be made without the ham. Sweet potato fries are also a great alternative to the frozen fries.
