Green herb rice

Ingredients for 4 servings:

  • 250 g basmati rice
  • 1 shallot(s)
  • 1 clove(s) garlic
  • 1 cm ginger
  • 1 tbsp parsley, chopped
  • 1 tbsp chives, chopped
  • 1 tbsp coriander, chopped
  • 1 tbsp mint, chopped
  • 500 ml water
  • 2 tbsp yogurt
  • Butter for frying
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Finely chop the shallot, garlic, and ginger and fry in butter over medium heat. Add the herbs and sauté briefly. Then add the water, yogurt, and rice, bring to a boil, and simmer over low heat for about 15 minutes. Stir occasionally. Serve when the water has been absorbed by the rice or evaporated. If necessary, add a little more water and simmer a little longer if the rice is not cooked.
