Ingredients for 4 servings:

  • 1 can of corn
  • 2 carrots
  • 1 bunch of spring onions (4 pieces)
  • 1 small iceberg lettuce
  • 1 small salad (Lollo bianco)
  • 1 handful of arugula
  • 200 ml buttermilk
  • 100 g crème fraîche
  • 1 lemon(s) , (juice)
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with buttermilk dressing

Drain the corn and place it in a large salad bowl. Peel the carrots and grate them. Finely slice the spring onions and add them to the salad bowl. Chop both lettuces as finely as possible, spin them dry in a salad spinner along with the washed arugula, and then add them to the bowl. Mix everything well. For the dressing, whisk together the buttermilk, crème fraîche, and lemon juice. Season generously with salt, pepper, and sugar; it’s best to taste and adjust the seasoning if necessary. Just before serving, pour the dressing over the salad and mix.
