Ingredients for 4 servings:

  • 750 g beef
  • 250 g beans (green beans)
  • 1 bay leaf
  • 1 large onion(s), finely chopped
  • 1 garlic clove(s), finely chopped
  • 1 cup(s) tomatoes, from the can
  • salt and pepper
  • 4 potatoes
  • 6 carrots
  • 6 small onions
  • butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 3 hours

Portuguese bean stew

Melt some butter in a saucepan. When the butter is hot, add the onion, garlic, and chopped beef. Simmer over low heat, stirring constantly until the meat is golden brown. Next, gradually add the water, followed by the tomato and bay leaf, and season with salt and pepper. Stir everything together and simmer over low heat for about 1 1/2 hours. Then add the diced potatoes, grated carrots, and 6 whole onions. Simmer for another 35 minutes, or until the vegetables are tender. About 15 minutes before the vegetables are tender, add the striped broad beans.
