'Green' potato soup

Ingredients for 4 servings:

  • 600 g potatoes
  • 1 large onion(s)
  • 1 garlic clove(s)
  • 1 small head of savoy cabbage (approx. 400 g)
  • 100 g sausage (chorizo)
  • salt and pepper
  • 1 tsp vegetable broth, instant
  • olive oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the potatoes, onion, and garlic clove. Dice the potatoes, quarter the garlic clove, and place it in a pot with the whole onion. Fill with water, add a little salt, and cover and simmer the potatoes for 20 minutes. Fish out the onion and garlic and discard. Remove the potatoes from the cooking liquid with a slotted spoon, place them in a bowl, and mash with a fork. Trim, wash, and quarter the savoy cabbage. Remove the stalk, cut the savoy cabbage into very fine strips, and set aside. Remove the skin from the chorizo ​​and slice the sausage into rings. Bring the potato cooking liquid to a boil and add the savoy cabbage strips and chorizo ​​slices. Add the mashed potatoes. Season the soup with salt, pepper, and vegetable stock, bring to a boil, and simmer for about 5 minutes. Serve very hot, drizzled with a little olive oil.
