Ingredients for 4 servings:
- 600 g potatoes
- 1 large onion(s)
- 1 garlic clove(s)
- 1 small head of savoy cabbage (approx. 400 g)
- 100 g sausage (chorizo)
- salt and pepper
- 1 tsp vegetable broth, instant
- olive oil
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel the potatoes, onion, and garlic clove. Dice the potatoes, quarter the garlic clove, and place it in a pot with the whole onion. Fill with water, add a little salt, and cover and simmer the potatoes for 20 minutes. Fish out the onion and garlic and discard. Remove the potatoes from the cooking liquid with a slotted spoon, place them in a bowl, and mash with a fork. Trim, wash, and quarter the savoy cabbage. Remove the stalk, cut the savoy cabbage into very fine strips, and set aside. Remove the skin from the chorizo and slice the sausage into rings. Bring the potato cooking liquid to a boil and add the savoy cabbage strips and chorizo slices. Add the mashed potatoes. Season the soup with salt, pepper, and vegetable stock, bring to a boil, and simmer for about 5 minutes. Serve very hot, drizzled with a little olive oil.
