Green Protein Feta Pasta

Ingredients for 4 servings:

  • 300 g feta cheese
  • 200 g leaf spinach
  • 150 g broccoli
  • 265 g chickpeas
  • 2 tbsp olive oil
  • 500 g pasta
  • 100 g protein powder, flavorless, optional
  • salt and pepper
  • rosemary
  • Paprika powder, sweet

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

vegetarian and simple

Cut the feta cheese into large pieces and place it in a baking dish with the vegetables, then drizzle with 2 tablespoons of olive oil. Place the baking dish in the oven at 180°C (fan oven) for 25 minutes. After about 10 minutes, cook the pasta in boiling, salted water for 10-12 minutes. Then drain. Remove the baking dish from the oven. Place the feta cheese and vegetables in a suitable container and blend with a hand blender until creamy. Add warm water if necessary to make it a little more liquid. Optionally, add the additional protein powder if desired. Season to taste (I personally like to use paprika, rosemary, pepper, and salt). Finally, pour the paste over the pasta and mix well. Tip: The vegetable feta paste can also be used as a dip or spread.
