to the Pizza Calzone

Pour olive oil into a bowl, mix with freshly squeezed lemon juice, and season with pepper and salt. Peel a small clove of garlic, press it through a garlic press, and stir it into the olive oil. Don’t use too much garlic, so the typical flavor of the parsley isn’t overpowered. Rinse and dry the parsley, and chop as finely as possible with a mincing knife or a sharp chef’s knife. Add the parsley to the bowl and mix with the oil. Let the Green Calzone Sauce sit for a while and serve with Pizza Calzone. You can also make larger batches of Green Calzone Sauce and store it in a boiled-out jar with a screw lid in the refrigerator for several days.
