Green spelt and sauerkraut casserole

Ingredients for 4 servings:

  • 250 g green spelt
  • ½ liter vegetable broth
  • 200 g onion(s)
  • 300 g apples
  • 2 tbsp sunflower oil
  • 500 g sauerkraut
  • 1 tsp caraway powder
  • 1 cup of sweet cream (approx. 200 ml)
  • 200 g Gouda, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cook the green spelt in the vegetable broth for about 20-30 minutes until al dente. Dice the onion and apples and sauté in the sunflower oil. Add the sauerkraut and sauté. Season with caraway seeds and stir in the cooked green spelt. Transfer the mixture to a baking dish and pour over the cream. Sprinkle with grated cheese. Bake in a preheated oven at 200°C (top/bottom heat) for about 20-30 minutes, until the cheese is golden brown.
