  • 150 g green spelt meal
  • 50 g butter
  • 1 large onion(s)
  • 2 garlic cloves
  • 2 eggs
  • 1 ½ tbsp mixed herbs, chopped

  • Wheat flour, whole grain
  • Salt water or vegetable broth

Cut the rolls into slices and pour half of the milk over them. The rolls should be covered with milk. Bring the remaining milk to a boil, stir in the green spelt meal, bring back to a boil, and let it swell for about 10 minutes. Melt the butter, finely dice the onions and garlic, and sauté until translucent. Add the sliced ​​rolls and the swollen green spelt meal and blend with a hand blender until smooth. Heat again while stirring. Gradually stir in the eggs and herbs and season generously with salt, pepper, and nutmeg. Now form the dough into about 10-12 dumplings and let them simmer in boiling salted water (or boiling vegetable stock) for 15 minutes. The water should be stirring gently, but not boiling vigorously. We eat the dumplings as a side dish with schnitzel, goulash, or roasts. Or as a vegetarian meal with a cheese sauce, or sliced ​​and fried in butter. With a nice mixed salad.
