Green tea jelly stars

Ingredients for 12 servings:

  • 10 g matcha powder (Japanese green tea powder)
  • 1 liter of water
  • 175 g sugar
  • 2 tbsp mirin (sweet rice wine for cooking)
  • 10 g agar-agar
  • 20 g brown sugar, for sprinkling

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Mix the agar-agar with the sugar and 1 liter of warm water and let stand for 5 minutes. Add the green tea and rice wine and bring to a vigorous boil. Pour the liquid into a shallow baking dish, about 2 cm high. Let it cool, and then refrigerate for about 2 hours. Turn the tea jelly out onto a countertop and cut out 12 pieces using a 10 cm diameter star cutter. Arrange on a decorative platter and sprinkle with brown sugar. Halved strawberries, mango slices, lychees, or fruit purée are great garnishes.
