Green Thai Curry

Ingredients for 4 servings:

  • 2 tbsp green curry paste
  • 2 tbsp sesame oil
  • 4 kaffir lime leaves
  • 1 stalk lemongrass, crushed
  • 250 ml coconut milk
  • 450 g smoked tofu, diced
  • 1 cucumber(s)
  • 1 small zucchini
  • 1 head of broccoli
  • 3 green bell peppers
  • 2 chili peppers, green
  • 15 basil leaves

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Fry the curry paste in oil until bubbles form. Add the lime leaves and lemongrass. Stir in the coconut milk. Add the smoked tofu and chopped vegetables and simmer for about five minutes. Deseed and finely chop the chilies, then add them along with the basil. Simmer and season to taste. Serve with fragrant rice.
