Ingredients for 4 servings:

  • 1 onion(s) for the vinaigrette
  • 1 bunch of chives for the vinaigrette
  • 1 bunch of parsley for the vinaigrette
  • 1 bunch tarragon for the vinaigrette
  • 1 bunch of dill for the vinaigrette
  • 1 tsp mustard, mild or hot to taste
  • 3 tbsp vinegar (wine vinegar), for the vinaigrette
  • 6 tbsp oil (olive oil), cold-pressed, for the vinaigrette
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
  • 3 kg asparagus, green
  • 1 lemon(s) to taste

Grilled asparagus with vinaigrette

I recommend green asparagus for grilling. Peel the asparagus as usual and trim the ends. When the charcoal is glowing white, brush the asparagus with a little olive oil and grill immediately. The asparagus needs about 2-4 minutes (depending on the thickness of the stalks) to cook. Turn frequently while grilling. After grilling, drizzle or sprinkle with a little lemon juice and salt and pepper. To prepare the vinaigrette: Finely chop the herbs and onion, mix together the vinegar, oil and mustard, and season with salt and pepper. White bread, a crisp salad and, of course, a good piece of meat, along with a glass of white wine to drink, round off the grilling experience.
