Grilled Goat Cheese on Salad with Tangy Fruit Dressing

The perfect grilled goat cheese on salad with tangy fruit dressing recipe with a picture and simple step-by-step instructions.

  • 500 g Lamb’S lettuce
  • 25 Pc. Cherry tomatoes
  • 200 g Pine nuts
  • 3 tbsp Lingonberry fresh
  • 3 tbsp Balsamic vinegar
  • 1 Pc. Onion
  • 150 ml Red wine
  • 1 pinch Salt and pepper
  • 1 pinch Sugar
  • 6 disc Goat cheese
  • 1 Pc. Baguette
  1. Clean and wash the lamb’s lettuce. Dry in a cloth or the salad spinner. Wash and quarter the cherry tomatoes. Arrange the salad with the tomatoes on large flat plates.
  2. For the dressing, mix the onion, cranberries, balsamic vinegar and wine into a dressing in a blender. Season to taste with sugar, salt and pepper. Decorate the dressing as strips on the salad.
  3. Roast an approx. 3 cm thick slice of goat cheese under the grill and place on the salad. Roast the pine nuts in the pan and sprinkle over them.
  4. Toast the baguette slices on the toaster and place them on the salad.
