Grilled Goat Cheese on Salad with Tangy Fruit Dressing

Ingredients
 

  • 500 g Lamb's lettuce
  • 25 Pc. Cherry tomatoes
  • 200 g Pine nuts
  • 3 tbsp Lingonberry fresh
  • 3 tbsp Balsamic vinegar
  • 1 Pc. Onion
  • 150 ml Red wine
  • 1 pinch Salt and pepper
  • 1 pinch Sugar
  • 6 disc Goat cheese
  • 1 Pc. Baguette

Instructions
 

  • Clean and wash the lamb's lettuce. Dry in a cloth or the salad spinner. Wash and quarter the cherry tomatoes. Arrange the salad with the tomatoes on large flat plates.
  • For the dressing, mix the onion, cranberries, balsamic vinegar and wine into a dressing in a blender. Season to taste with sugar, salt and pepper. Decorate the dressing as strips on the salad.
  • Roast an approx. 3 cm thick slice of goat cheese under the grill and place on the salad. Roast the pine nuts in the pan and sprinkle over them.
  • Toast the baguette slices on the toaster and place them on the salad.
