Grilled marinated zucchini with feta crumbs – a barbecue side dish

Ingredients for 4 servings:

  • 1 large garlic clove(s)
  • 3 tbsp olive oil, good
  • 1 ½ tbsp balsamic vinegar
  • 1 tsp mustard, medium hot
  • ½ tsp thyme, dried or fresh
  • salt and pepper
  • e.g. chili flakes
  • 3 m.-large zucchini
  • e.g. feta cheese

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 35 minutes

Slice or slice the zucchini lengthwise, as desired. Mince the garlic clove. Mix the marinade ingredients together, brush the zucchini with it, and marinate for 1 hour. If you’re in a hurry, you can also grill the zucchini directly. Cook the zucchini in a grill pan or directly on the grill to create nice grill marks. Arrange the grilled zucchini on a plate and crumble the feta cheese over the zucchini.
