Grilled peach with muesli crunch and basil sour cream ice cream

Ingredients for 4 servings:

  • 100 g sour cream
  • 100 g crème fraîche
  • 25 g cream
  • 2 lemons, juice
  • 2 stalks of basil
  • 4 tbsp muesli without berries/fruit
  • 3 tbsp sugar
  • 2 peaches
  • brown sugar

Instructions

Working time approx. 25 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 25 minutes

Pluck the basil leaves from the stems and chop finely. Mix together the sour cream, crème fraîche, cream, lemon juice, and basil and pour into an ice cream maker. If you don’t have an ice cream maker, place everything in a bowl in the freezer, check several times, and mix with a whisk (later with a fork) to break up the ice crystals. Caramelize the muesli and sugar in a pan and arrange on four plates as a bed for the peaches. Halve the peaches and remove the stones. Sprinkle the cut sides with a little brown sugar and grill first on the round side, then on the cut side. Then arrange on the muesli bed and place a scoop of sour cream ice cream next to it.
