Ingredients for 4 servings:

  • 1 large white bread
  • 300 ml olive oil
  • 3 cloves garlic
  • some spice(s), Italian or herbs

Here’s a quick and delicious side dish for your next barbecue: Slice the ideally fresh white bread. Pour a little fruity olive oil onto a large plate, set aside, and briefly dip the bread slices in it on both sides until the surface is coated. You can also soak it a little longer; this will give it a stronger olive oil flavor. Now heat up the grill and set it to normal heat (max. 350 degrees). A cast iron grill is ideal, as it produces beautiful grill marks. Brown the bread on both sides for 5-10 minutes, depending on the heat, until the outside is crispy. Remove from the grill to a plate and quickly rub with fresh, halved garlic cloves. Important: the bread must be grilled until crispy before rubbing, otherwise it won’t rub as well because the garlic is very hard. Rub briefly for a light garlic flavor, or longer for a stronger one. If you like, you can sprinkle some Italian spices or fresh herbs on top for a nice look. Serve the grilled bread fresh from the grill as an appetizer or side dish; your guests will love it! If you prefer a more tomatoey flavor, you can add a little extra: make a mixture of fresh tomato pieces, Italian herbs, and salt, pepper, or chili. Then add 2-3 tablespoons of this to the bread after it’s already been turned on the grill. Your grilled bruschetta is ready! I recommend fresh white bread or baguette; the larger slices are easier to rub with the garlic.
