Groninger mustard soup

Ingredients for 4 servings:

  • 50 g butter
  • 60 g flour
  • ⅛ liter cream or cremefine for cooking
  • 1 liter vegetable broth
  • 2 tbsp mustard (Groninger mustard, coarse)
  • ½ package of ham
  • 1 leek(s)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the butter, but don’t fry it! Once the butter has completely melted, slowly add the flour and stir until the flour and butter are combined. Sauté over low heat for a few minutes. Heat the broth (do not boil!) and then pour it into the butter and flour mixture. Whisk until smooth and simmer for about 10 minutes, stirring occasionally. Strain the soup through a sieve, then add the mustard and season with salt and pepper (the amount should be adjusted depending on how fresh the mustard is). Note: The leek also adds extra spice! Just before serving, add the cream, leek, and ham.
