Guacamole Eggs

Ingredients for 3 servings:

  • 6 eggs
  • 1 avocado(s)
  • 1 tbsp lime juice
  • salt and pepper
  • 1 small tomato(s)
  • 1 small shallot(s)
  • 1 tbsp coriander leaves
  • 1 clove(s) garlic
  • some chili

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Hard-boil the eggs and then plunge them into an ice bath or cool thoroughly in cold water. Peel and halve all of the eggs, scoop out the yolks with a teaspoon, and place them in a bowl. Add the sliced ​​avocado to the egg yolks and mash them together. Then add the finely chopped onion, garlic, lime juice, cilantro, and a little chili and mix everything together. Season with salt and pepper. Stir in the diced and seeded tomato. If you don’t like cilantro, you can also use parsley. Once everything is well mixed, fill the eggs with the guacamole. This works best with a small spoon. Garnish with a leaf of cilantro or parsley and serve. As a small appetizer or on a buffet.
