Gugelhupf with apple and walnuts

Ingredients for 1 servings:

  • 125 g butter or margarine
  • 4 eggs
  • 100 g sugar
  • 1 tbsp orange sugar
  • 1 pinch of vanilla powder
  • 200 g spelt flour
  • 100 g wholemeal spelt flour
  • ½ pack of baking powder
  • 2 tbsp natural yogurt 3.5%
  • 100 g walnuts, finely chopped
  • 1 large apple, sour

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Whisk the fat with the sugar, orange sugar, and vanilla until fluffy and the sugar has dissolved. Gradually beat in the eggs, one at a time. Mix the spelt flour with the baking powder and sift. Sift the wholemeal spelt flour and add the wholemeal flour again. Briefly stir in both flours, then add the yogurt and stir briefly again. Peel the apple and cut it into very small cubes, then mix it in with the chopped walnuts. Pour the batter into a bundt cake pan and bake at 200 degrees Celsius (top/bottom heat) for about 40 minutes (use a skewer to test if it is done). Tip: Make your own orange sugar: Finely peel the rind of very ripe and intensely fragrant organic oranges using a zester and place it in a jar with sugar. Shake the jar frequently, opening it briefly at first to allow the moisture to escape.
