Harz national dish
“Hackus und Knieste” (meat and kneaded noodles) was always a staple dish at my house for New Year’s Eve. This dish is also delicious and very convivial on other winter days. The potatoes are halved lengthwise and placed cut-side down on a greased baking sheet. Then the potatoes are brushed with oil and sprinkled with caraway seeds. Place the baking sheet in a preheated oven (approx. 200°C – 225°C). Bake the potatoes for about 35 – 45 minutes, until the skin is golden brown and slightly crumbly. Occasionally pierce the potatoes with a roulade needle – when they are cooked, the needle will be easy to pierce. In the meantime, season the ground meat and shape it into a pig’s head on a large wooden board. Now you can decorate the pig with cucumbers and parsley, if you like, to give it a really fun look. Spread sliced liverwurst and butter all around the wooden board. Once everything is prepared, spread the potato halves with liverwurst or butter and season with salt and pepper to taste. The pickles can also be served as a snack. The recipe is easy to prepare, inexpensive, and a real party hit. Only shaping the pig’s head requires a bit of imagination.
