Haddock in a steamer (built-in appliance)

Ingredients for 3 servings:

  • 750 g fish (haddock), whole
  • 1 bunch of roots (parsley root, leek, carrot)
  • 2 large onions
  • salt and pepper
  • 5 juniper berries
  • 50 g butter
  • 1 lemon(s) or lime

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the root vegetables and onions and cut them into small strips. Arrange the strips evenly on the solid tray of the steamer. Add the juniper berries and sprinkle with salt and pepper. Sprinkle the butter in small pieces over the vegetables. Then place the vegetables in the steamer for 20 minutes at 100°C. In the meantime, wash the fish, season inside and out with a little pepper and salt, and drizzle with lemon juice. After 20 minutes, place the fish on the bed of vegetables and continue cooking at 100°C for another 20-25 minutes. The vegetable/fish stock is excellent for flavoring any mustard sauce you may have prepared. Serve with parsley potatoes and lettuce.
