Ingredients for 1 servings:

  • 250 g cheese (halloumi)
  • 2 cloves garlic
  • 1 chili pepper(s) (piri-piri)
  • 1 pinch of salt
  • Pepper, freshly ground
  • 2 tsp lime juice
  • olive oil
  • Basil, fresh
  • Thyme, fresh
  • Rosemary, fresh
  • n. B. Speck
  • 4 shallots
  • 8 mushrooms
  • 1 red bell pepper(s)

Working time approx. 15 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 15 minutes

Wash the halloumi, pat dry, and cut into 0.5 cm thick slices. Mix all the ingredients in a bowl and marinate the halloumi. It’s best to leave it in the fridge overnight. The halloumi can either be grilled (on the barbecue or in the oven) or fried; in any case, it must be done at a high temperature, otherwise it will become tough. Brush it with the remaining marinade several times during preparation. Cut the halloumi into cubes approximately 3 x 3 cm in size and marinate as above. Soak the wooden skewers in water 1 hour beforehand to prevent them from burning. Alternate the halloumi with the vegetables/bacon and grill. It goes well with tzatziki, garlic bread, and various salads.
