Ham and asparagus muffins

Ingredients for 1 servings:

  • 300 g asparagus
  • some salt
  • 1 tsp sugar
  • 100 g cooked ham
  • 80 g butter or margarine
  • 350 g flour
  • 1 packet of baking powder
  • 1 tsp baking soda
  • 1 tbsp parsley, freshly chopped
  • 2 eggs
  • 120 g sour cream
  • some pepper from the mill
  • 250 ml water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

makes about 12 pieces

Peel the asparagus and cut into approximately 1 cm pieces. Bring water to a boil with salt and sugar, cook the asparagus for approximately 10 minutes, drain the asparagus water and set aside. Cut the ham into small cubes. Melt the butter. Beat the eggs, 200 ml of the asparagus water, and sour cream with a hand mixer until frothy. Add the butter. Mix the flour with the remaining ingredients and add it to the egg mixture a spoonful at a time. Fold in the asparagus pieces and ham. Place in a greased muffin tin. Bake in a preheated oven at 190°C for approximately 25 minutes.
