Ingredients for 6 servings:

  • 300 g puff pastry
  • 7 large eggs
  • 2 stalk(s) leeks
  • 100 g cooked ham
  • pepper
  • Salt
  • 150 g cheese, e.g. toast cheese
  • Fat, for the shape

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Lightly grease a large baking dish and spread half of the puff pastry over the base, creating a small rim. Crack 6 eggs onto the dish and lightly pierce the yolks with a fork, but do not scramble them. Finely slice the leek and stir them into the egg. Season with salt and pepper. Arrange the cooked ham in strips over the top, then sprinkle with the cheese. Cover everything with the rest of the puff pastry and brush the beaten egg over it. Bake at around 200°C for around 25 minutes, until the surface is nicely browned and crispy. Serve with a green salad. Tip: The portions can also be frozen and thawed individually in the microwave later.
