Baked beans with egg

Ingredients for 2 servings:

  • 1 small onion(s)
  • 3 tbsp clarified butter
  • 100 g bacon, cut into thin strips
  • 1 can beans, (baked beans, 415 g)
  • 2 m.-sized eggs
  • 2 slices of white bread (2 cm thick)
  • some salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the onion and dice finely. Heat 1 tablespoon of clarified butter in a small saucepan and fry the bacon strips until light brown all over. Add the diced onion and fry while stirring until translucent. Add the baked beans and heat. Turn off the heat. Divide the beans between two ovenproof dishes. Make a well in the center of each and crack 1 egg into each, drop it in and season with salt. Bake the beans in a preheated oven at 200°C (without fan) on the oven rack on the middle shelf for 12 to 15 minutes, until the yolk just begins to set. Cut each loaf into 4 strips. Heat 1 tablespoon of clarified butter in a non-stick frying pan and fry the bread strips over medium heat until golden brown all over. Gradually add the remaining clarified butter. Serve the bread strips with the beans.
