Ham and feta muffins with goat's cheese

Ingredients for 1 servings:

  • 150 g cooked ham
  • 100 g feta cheese
  • 100 g goat’s cheese
  • 3 tbsp herbs (rosemary, parsley, chives, thyme …, fresh or frozen), mixed
  • 1 clove(s) garlic, finely chopped
  • 2 Pepper, pickled, mild or hot
  • 300 g natural yogurt
  • salt and pepper
  • 250 g flour
  • 50 g butter, soft
  • 3 tsp baking powder
  • 1 egg(s)
  • possibly grease for the mold
  • possibly paper cups

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Savory muffins for many occasions—buffet, snack, appetizer, picnic—it doesn’t always have to be a sweet muffin. Makes 18.

Dice the feta cheese and ham. Finely dice the pepperoni and mix with the ham and feta cheese, then set aside. Whisk the yogurt with the egg, goat’s cheese, herbs, butter, salt, pepper, and finely chopped garlic until smooth. Combine the flour and baking powder and stir into the yogurt mixture. Fold in the feta and ham mixture. Grease a muffin tin or line it with paper baking cups and fill with the batter. Bake in a preheated oven at 180°C for about 25-30 minutes. Served warm with salad, this makes a great dinner. Cold and left to marinate overnight, it makes a delicious picnic snack or a mid-morning snack. It’s also delicious on a party buffet.
