Ham noodles with potatoes

Ingredients for 3 servings:

  • 250 g pasta, small
  • 3 m.-sized onion(s)
  • 3 m.-sized potatoes
  • 100 g dried meat, diced
  • 200 g ham, cooked
  • 2 eggs
  • 1 bag of Emmental cheese, grated, about 150 g
  • 1 bunch of chives
  • Salt
  • pepper
  • Oil or fat, for frying
  • Salt water for the pasta

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the pasta in salted water according to the package instructions until al dente. Meanwhile, peel the potatoes and cut into wafer-thin slices or even grate them. Peel and finely chop the onions and finely chop the ham. Heat the cooking fat or oil, such as sunflower oil, in a pan and sauté the onions. Add the potato slices, the dried beef, and the minced ham. Fry everything at a moderate heat until the ingredients have taken on some color. Beat the eggs and add half of the grated cheese, season with salt and pepper. Add the cooked pasta to the pan. Let it brown slightly and then stir in the egg and cheese mixture. Reduce the heat slightly beforehand so the eggs don’t set immediately. Season again with salt and pepper. Serve on plates and top with the remaining cheese and the finely chopped chives.
