Hand-made Wholegrain Spelled Pasta
The perfect hand-made wholegrain spelled pasta recipe with a picture and simple step-by-step instructions.
Whole grain pasta dough:
- 250 g Wholemeal spelled flour
- 2 piece Organic eggs, depending on the size
- 6 tbsp Water or cooking liquid
- 2 Pinches Salt
- 2 Pinches Colorful pepper
- 1 stalk Finely chopped parsley
- 2 piece Finely chopped mushrooms
Whole grain pasta dough:
- Cut the parsley and mushrooms very finely with the kitchen knife, measure out the remaining ingredients and slowly stir the flour in a bowl with the eggs, spices, cooking liquid, parsley and mushrooms to form a lump of dough. Knead it vigorously and put it in a cool place for 30 minutes.
Further processing:
- Sprinkle some additional flour between baking paper or foil and then roll out the dough several times, flatter and thin enough with the rolling pin. Use the kitchen knife to cut into several 7cm wide strips and finally cut them into ribbon noodles or 2mm fine cuts. You can also use the dough for a pasta machine.
Drying and storage:
- Place in the sun on a chute or tray to dry the pasta and make it more durable. Pour completely dry into large pasta jars with lids and store in a cool place.
Preparation:
- Please cook the dried noodles in salted water. The finished noodles swell up a little.
