Wholegrain Spelled Rolls

The perfect wholegrain spelled rolls recipe with a picture and simple step-by-step instructions.

Ingredients for about 12 pieces

  • 500 g Wholemeal spelled flour
  • 10 g Salt
  • 15 g Soft butter
  • 1 tsp Bread spice mix
  • 50 g Unpeeled sesame seeds
  • 15 g Fresh yeast
  • 330 g Water about 23 degrees
  • 3 tbsp Sesame to roll over
  • Water to spray
  1. Weigh all ingredients and place in a mixing bowl except for the water and yeast
  2. Dissolve the yeast in the water, add to the other ingredients and knead the dough for about 5 minutes
  3. Place the dough on the floured work surface, shape it into a ball and cover it with a tea towel and let it rest for approx. 15 minutes
  4. Then cut off dough pieces of approx. 80 grams and shape them into a round shape
  5. Spray with water and roll in sesame seeds and place on a baking sheet lined with baking paper
  6. cut 3 times with scissors, always cutting away from the center with a point (as in the picture)
  7. Cover and let rise for approx. 30 to 40 minutes, depending on the room temperature
  8. Meanwhile preheat the oven to 230 degrees (top – bottom heat)
  9. Spray the rolls well with water, put them in the oven and bake for about 15 minutes
  10. Also suitable for freezing!
