Ingredients for 4 servings:

  • 12 Harzer cheese (Handkäs’)
  • 1 cup sour cream
  • 1 cup crème fraîche
  • 2 spring onions
  • 1 bunch of chives
  • 1 tsp, heaped mustard
  • 1 clove(s) garlic
  • 1 tsp lemon juice
  • Paprika powder
  • salt and pepper

Cut the Handkäse into small cubes, and the spring onions and chives into fine rings. Mix the sour cream, crème fraîche, and mustard to make a dressing. Squeeze a garlic clove and add it. Season to taste with lemon juice, paprika, salt, and pepper. Mix with the ingredients and let it sit in the refrigerator for a few hours. Season again before serving. Tastes wonderful with apple cider on baguette or fresh, buttered farmhouse bread and will win over even the most stubborn “Handkäse hater.” 455 kcal per serving.
