Starter: Harirra soup

  • 3 piece Carrots
  • 5 piece Tomatoes
  • 2 piece Onions
  • 0,25 bunch Fresh smooth parsley
  • 0,5 bunch Parsely
  • 2 tbsp Tomato paste
  • 4 tbsp Flour
  • 1,5 tsp Harirra spice
  • 2 tsp Vegetable broth

Amuse-Gueule: cucumber kisses mint drink with Bestilla

  • 2 packet Puff pastry
  • 2 piece Chicken leg
  • 3 piece Onion
  • 0,5 bunch Parsely
  • 1 packet Skinned almonds
  • 1 piece Egg
  • 1 pinch Salt
  • 3 tsp Cinammon
  • 1 tsp Ground ginger
  • 0,5 tsp Black pepper
  • 1 tsp Turmeric
  • 4 tbsp Sugar

Starter: Harira soup

  1. Cut the vegetables and herbs into small pieces and mix with a glass of water in a blender. Then fry the whole thing in a saucepan with a little olive oil. Add tomato paste and add all the spices and approx. 5-2 liters of water and bring to the boil briefly. Then mix 4 tablespoons of flour with 2 small glasses of water and add to the pan. Cook for 1-5 hours.

  1. Bring the chicken legs with the coarsely chopped onions and finely chopped parsley in 400 ml of water to a boil. Add 1 teaspoon of cinnamon, salt, ginger powder, black pepper and turmeric and simmer for 45 minutes.
  2. Then take out the chicken drumsticks and pluck them into small pieces. Let the remaining contents of the pot continue to boil until the water has boiled off completely.
  3. Now put the chicken back into the saucepan that has been removed from the heat, add the sugar, the egg and the remaining cinnamon. Roast the almonds in a pan, chop them up and add them as well.
  4. Cut the puff pastry into strips approx. 10 cm wide, add the filling and fold into triangles. Finally, brush with a little melted butter and place in the oven for about 10-15 minutes at 180 degrees.
  5. After baking, sprinkle with cinnamon and powdered sugar.
