Harz cheese fondue

Ingredients for 4 servings:

  • 1 bacon rind
  • 1 garlic clove(s)
  • 50 g bacon, fat, diced
  • 500 g Harzer cheese
  • 250 ml milk
  • 250 ml dry white wine
  • 30 g butter
  • 1 tbsp potato flour
  • 1 tbsp brandy
  • 2 baguettes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Cheese fondue with a twist with light Harzer cheese

Rub the fondue pot with a piece of bacon rind and a clove of garlic. Dice the fatty bacon and finely chop the garlic clove. Brown both in a fondue pot. Dice the Harzer cheese and add it to the pot alternately with the milk. Melt while stirring constantly. Add the butter and white wine and bring to a boil. Mix the potato flour and brandy and add it, bringing to a boil again briefly. Season with freshly ground pepper. Dice the baguettes and dip them into the fondue.
