Ingredients for 4 servings:

  • 0.45 kg potatoes
  • Margarine, or butter, or oil
  • 0.3 kg ham or bacon, diced
  • 250 g crème fraîche
  • 800 g onion(s), cut into rings
  • 175 g Harzer cheese, cut into approx. 3 mm thick slices
  • 2 eggs
  • 1 garlic clove(s)
  • salt and pepper
  • nutmeg
  • Paprika powder, sweet
  • Caraway powder

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Harzer cheese, potatoes, ham, onions

Boil the potatoes in salted water until half-cooked. Allow to cool, then cut into thin slices. Rub the garlic clove into a baking dish, then grease with fat. Arrange the potato slices in a fan-like pattern in the baking dish and season with nutmeg. If desired, layer larger potato slices around the edge of the dish. Sauté the onion rings in the hot fat, add the diced ham, and sauté both until al dente, season with salt and pepper, then allow to cool. If desired, add the finely chopped garlic clove. Mix the crème fraîche with the eggs, season with salt, pepper, paprika, and nutmeg. Stir in the cooled onion/ham mixture and pour over the potatoes. Top with the cheese slices. Bake for 40-45 minutes at 200°C fan-assisted oven. Serve with a cold beer and hearty lamb’s lettuce or endive salad.
