Ingredients for 4 servings:

  • 4 leaves of lettuce, crisp and fresh
  • 4 slices of farmhouse bread
  • 2 tomatoes
  • 5 tbsp sour cream
  • Chives, in rolls and/or wild garlic
  • 2 tsp sweet paprika powder
  • 3 egg yolks
  • 150 g butter, soft
  • 2 tbsp mustard
  • 2 onions, diced
  • 400 g cheese, Harzer
  • Crème fraîche

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Harzer cheese salad on farmer’s bread

Chop the Harzer cheese fairly finely and add the onions. Combine the butter, mustard, paprika, egg yolk, and cream and stir to combine. Let everything sit for a few minutes. Place the fresh farmhouse bread slices on plates or boards and cover with the washed lettuce leaves. Spread the cheese salad on top and top with tomato slices. Finally, garnish with crème fraîche and chives or chopped wild garlic, or perhaps both.
