Ingredients for 6 servings:

  • ½ pineapple
  • Seasonal fruits, various
  • 4 lettuce leaves
  • 2 tbsp sugar
  • 100 ml pineapple juice
  • 50 g sugar
  • 1 egg yolk
  • 1 cup of cream
  • 1 lemon(s)

Peel the pineapple and cut in half. Collect any juice that runs through the pineapple. Cut out the hard insides and scoop out the flesh with a sharp knife. Peel any seasonal fruit, cut into pieces or slices, and drizzle with lemon juice. Line each pineapple half with lettuce leaves and fill with the fruit. Sprinkle with sugar. To make the pineapple cream, heat the pineapple juice and sugar. Once the sugar has dissolved, remove the pan from the heat. Whisk the egg yolks in a small bowl and stir into the juice. Reduce to a creamy consistency over low heat while stirring continuously. Allow to cool, then fold in the stiffly whipped cream. Allow to chill thoroughly, then serve.
