Exotic fruit compote

Ingredients for 3 servings:

  • 1 mango(s)
  • 1 papaya
  • 1 lime(s), juice only
  • 3 tbsp cane sugar
  • 1 ½ dl water
  • 1 tbsp brandy (Chantré), or 2 tbsp to taste.
  • ½ vanilla pod(s), scraped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

First, squeeze the lime. Then, cut the mango and papaya into roughly 2cm cubes and add them to the lime juice to ensure they retain their color. Heat the sugar and the lime juice (which you can still squeeze from the fruit) until slightly caramelized. Deglaze with water and Chantré, and add half of the scraped-out vanilla pod. Reduce the mixture to about two-thirds. Then add the fruit and simmer gently for about 10 minutes, until only a little juice remains. Remove the vanilla pod and let the compote cool. Tastes delicious with coconut butter or vanilla cream.
