Salmon tartar from Helga

Ingredients for 2 servings:

  • 2 salmon fillets
  • 3 spring onions, finely chopped
  • ¾ tsp salt
  • ¼ tsp pepper, freshly ground
  • 4 tbsp oil (lemon oil)
  • 1 tbsp lime juice
  • 1 pinch(s) coriander, ground
  • 2 tbsp Dill, chopped fresh
  • 1 tsp capers, finely chopped
  • 1 pinch(s) sugar, very small

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the frozen salmon fillet into very small cubes, chop them again with a sharp knife, stir in the chopped spring onions, salt and pepper, and add lemon oil. (If you don’t have lemon oil, it’s very important: first mix the olive oil into the finely chopped salmon before adding the acid, lemon juice, or lime juice.) Then add the remaining ingredients. (You can also add parsley, fresh basil, or even fresh cilantro, if you like!) Season to taste! I like to serve this with potato pancakes (Baggers or Reiber-Datschi) or simply with baguette.
