Ingredients for 8 servings:

  • 1.2 kg minced meat, mixed
  • 3 medium-sized onions, finely diced
  • 6 tbsp breadcrumbs
  • 3 eggs
  • 2 tsp salt (about 20g)
  • Pepper from the mill
  • 3 tbsp parsley, fresh, chopped, or dried
  • 3 tsp marjoram, dried
  • 3 tsp sweet paprika powder
  • 3 tsp mustard, medium hot
  • 4 garlic cloves, finely chopped
  • 300 g smoked pork belly (Wammerl), sliced
  • 1 pineapple, fresh, sliced ​​or cut into pieces
  • 250 g Emmental cheese (Swiss Emmental cheese), grated

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 2 hours

Combine the ground meat with onions, breadcrumbs, and eggs. Add salt, pepper, parsley, marjoram, paprika, mustard, and garlic, and mix thoroughly. Form the meat mixture into a flat loaf and place it on a large, deep baking sheet. Top with the smoked pork belly and bake in the oven at 180 degrees Celsius for about 40 minutes. Place the pineapple slices on the bacon and return the roast to the oven for another 15 minutes. Sprinkle the grated Emmental cheese on top and bake for another 15 minutes, until the cheese is nicely melted. Then, for about 5 minutes, brown the cheese with the grill on. Be careful not to burn the cheese. Remove the finished Hawaiian meatloaf, slice it, and serve!
