Ingredients for 1 servings:

  • 1,000 g berries (hawthorn whiteberries)
  • 2 m.-sized apples
  • 2 vanilla pods, the pulp
  • 1 lemon(s), organic, juice and zest
  • 1 orange(s), organic, juice and zest
  • 250 ml apple juice
  • 1 pinch of cinnamon
  • 1 pinch of clove powder
  • 300 g sugar, approx., to taste
  • 500 g gelling sugar, 3:1
  • Water, as needed

Instructions

Working time approx. 45 minutes; Rest period approx. 1 day; Total time approx. 1 day 45 minutes

Own creation

Peel and wash the berries and rinse them several times. Then place them in a bowl with a little water, just enough to cover them. Add the vanilla pods, scooping out the seeds, and let them steep in the water overnight, along with the berries. Twenty-four hours later, place the berries and the liquid in a saucepan with the sugar, cinnamon, ground cloves, the peeled and cleaned apples (which have no cores or cores), and the orange and lemon zest. Let it simmer for at least 5-10 minutes. Then add the apple juice and the juice of the two tropical fruits. Press everything through a food mill and pour the puree into a saucepan, mix with the gelling sugar, and cook according to the instructions. If you like, you can also add orange segments while the jam is boiling. Then place the finished jam in prepared, hot, rinsed, twist-off jars and seal tightly.
