Ingredients for 1 servings:

  • 375 g spelt flour
  • 125 g spelt, crushed
  • 250 g butter
  • 150 g cane sugar
  • 2 eggs
  • 10 g cinnamon
  • 4 g nutmeg
  • 3 g cloves
  • 2 g cardamom
  • ½ pack of baking powder (cream of tartar)
  • 1 pinch of salt
  • 1 pinch of vanilla sugar
  • Egg yolk for brushing
  • Almond(s) (almond flakes or almond sticks)

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Knead all ingredients into a smooth dough and let rest in the refrigerator for about 1 hour. Either roll out the dough and cut out cookies, or shape it into 2 cm diameter logs and cut into approximately 0.5 cm wide slices. Place the cookies on a prepared baking sheet, then brush with egg yolk and garnish with flaked or slivered almonds. Bake in a preheated oven at 160°C for about 12 minutes. The cookies should turn a light brown color. These cookies are not only supposed to make you happy, they also help me with heartburn, for example.
