Ingredients for 1 servings:
- 100 g oat flakes, coarse
- e.g. spelt flour
- ½ can coconut milk
- 75 g margarine
- 100 g cranberries
- 100 g brown sugar
- 1 tsp baking powder
- 1 tsp cinnamon
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Preheat the oven. Mix together the oats, coconut milk, margarine, cranberries, brown sugar, baking powder, and cinnamon. Add spelt flour as needed until a firm dough forms. Using a tablespoon, place small heaps of the cookies onto a baking sheet lined with parchment paper and bake at 180°C for about 10-15 minutes, until the cookies are lightly browned.
