Ingredients for 1 servings:

  • 50 g flour, einkorn whole
  • 50 g spelt white flour
  • 4 tbsp jam, sour, e.g. currant, greengage
  • ½ tsp, leveled baking powder
  • 2 eggs
  • 40 g raw cane sugar
  • some fruit, berries are best
  • 150 ml milk
  • ¼ pack of pudding powder (vanilla flavor)
  • Fat, for the shape

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 45 minutes

A cake that can be prepared as desired, but is healthy and figure-friendly!

Separate the eggs. Beat the egg yolks and jam until frothy. Beat the egg whites with the sugar until stiff peaks form. Stir the flour and baking powder into the egg yolk mixture, add the berries, and finally fold in the beaten egg whites. Pour into a small, well-greased dish (I used an 18 cm springform pan). Bake at 180°C for about 20-25 minutes. Mix the vanilla pudding powder with a little milk and, if desired, a little sugar until smooth. Heat the remaining milk, stir in the mixture, and bring to a boil while stirring. Pour over the still-warm cake and refrigerate for about 1 hour. This cake contains virtually no fat, little sugar, and its ingredients are also healthy. Definitely worth a try, and you can even eat two slices! You can, of course, use other types of flour, too.
