Healthy Carrot Salad

The perfect healthy carrot salad recipe with a picture and simple step-by-step instructions.

Dressing:

  • 1 tbsp Toasted sesame oil
  • 2 tbsp Olive oil
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Lemon juice
  • 0,5 tsp Salt
  • Some freshly ground pepper
  • 1 tsp Honey or maple syrup

for the salad:

  • 225 g Grated carrots
  • 3 tbsp Sesame
  • 4 tbsp Chopped fresh mint
  • 2 tbsp Raisins
  1. Mix the ingredients for the dressing together. Briefly toast the sesame without fat in a pan until it smells fragrant. Mix all ingredients together and let them steep briefly at room temperature.

Variation:

  1. Instead of sesame seeds, hazelnuts also go very well with the salad. Roughly chop 3 tablespoons of hazelnuts and roast them without fat. If you have hazelnut oil on hand, you can also use it to replace sesame oil. Instead of raisins, cranberries also go well with it. So you can give the salad a whole new twist by making a few small changes 🙂
