Healthy Fanta cake

Ingredients for 1 servings:

  • 2 eggs
  • 70 ml Fanta Zero, light
  • 65 g applesauce, unsweetened
  • 150 g spelt flour type 630
  • 2 tsp baking powder
  • e.g. liquid sweetener or Xucker
  • 500 g low-fat curd cheese
  • Bourbon vanilla flavor
  • ½ pack of instant gelatin
  • 175 g mandarin orange(s), unsweetened and 3 tbsp of the juice from the can

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Beat the eggs with Fanta until frothy. Add the applesauce, baking powder, spelt flour, and sweetener to taste, and mix well. Pour into a small dish (e.g., a 20 cm springform pan). Bake for at least 20 minutes at 180°C. Mix a little sweetener with the instant gelatine until well combined. Mix the low-fat quark with the vanilla and mandarin orange juice and carefully fold the mixture into the gelatine. Distribute the mandarins on the cake base and spread the cream on top. 140 kcal per serving.
